Chocolate Coconut Energy Balls

Chocolate Coconut Energy Balls are a staple in Dr. Patti Yik & Dr. Colin Race’s household. It’s a go-to baking recipe to make with their family! Enjoy the recipe in your own home, too:

Ingredients:

⁃ 1.5 cups of nuts (can mix varieties or use what is available) for example:  1/2 cup raw almonds, 1/2 cup raw cashews, 1/2 cup raw walnut pieces

⁃ 1/2 cup hemp seeds

⁃ 20 pitted medjool dates

⁃ 4 Tbsp extra virgin coconut oil

⁃ 1 tsp vanilla extract

⁃ 1/2 cup raw cocoa powder

⁃ 4 tsp raw honey (optional)

⁃ 2 Tbsp filtered water

⁃ 2 good pinches of Himalayan sea salt

⁃ 2/3 cup unsweetened shredded coconut (for rolling)

Directions:

1. Combine almonds, cashews, walnuts, and hemp hearts in a food processor or blender and process into a fine meal.

2. Take the pits out of the dates before adding them to the processor—process until well incorporated.

3. Add the remaining ingredients (except the shredded coconut) and combine until dough is formed. Alternating between high setting and pulsing on the food processor is helpful to mix well.

4. Place shredded coconut in a small bowl.

5. Roll into 1 tablespoon balls, then roll each ball in coconut to coat.

6. Place your energy balls in an air-tight container in the fridge or freezer. Keep refrigerated until serving. Makes approximately 30 balls. Enjoy!
