Fermented Gut-Friendly Berry Lemonade Recipe

Dr. Patti Yik loves making this delicious gut-friendly berry lemonade with her family! This recipe is from the “Healthy Kids, Happy Kids” book by Dr. Elisa Song:

Ingredients:

– 1/2 cup organic berries (any berries will do)

– 1 Tbsp brown sugar

– 1 cup fresh lemon juice (from approximately 4 organic lemons)

– 1 probiotic capsule

Directions:

– Place the berries and sugar in a 32oz glass mason jar. Use a wooden spoon to gently muddle the berries until they release juice.

– Add the lemon juice to the jar.

– Open up a probiotic capsule in a small bowl and use a couple of teaspoons of water to dissolve it. Discard the empty probiotic capsule.

– Stir the probiotic water and 2 cups of filtered water into the jar.

– Cover the lemonade with a mason jar lid. Leave the jar in a dark place at room temperature for 2 to 4 days to ferment. After the first two days, taste a little every day until the lemonade reaches your desired level of tanginess. Add more sugar to taste if desired.

– After fermenting, store the lemonade in the refrigerator. Enjoy chilled!
