Turkey & White Bean Chili Recipe

Dr. Kate Hadfield shares one of her favourite dishes in her household that is just as delicious as it is savoury: Turkey and White Bean Chili.
Ingredients:
1 onion, chopped
4 garlic cloves, minced
4 cups chicken broth
2 tsp cumin
3 jalapeno peppers, seeds removed
1lb turkey breast, cooked and chopped
4 cups white navy beans, cooked
3/4 cup coconut milk
2 Tbsps arrowroot powder
Instructions:
– Use a small amount of oil and saute the onions and garlic until soft.
– Stir in broth, cumin, peppers, turkey and beans. Bring to a boil and then simmer for 10 minutes.
– In a separate bowl, stir together the arrowroot powder with a small portion of the coconut milk. Then, add it to the pot along with the rest of the coconut milk.
This dish perfectly balances protein, healthy fats, and fibre – great for keeping your energy up and your hormones happy during the winter!
