Chocolate Black Bean Avocado Pudding

Ingredients:

4 organic medjool dates, pitted & chopped

1/2 cup unsalted organic pumpkin seeds

2 medium ripe organic avocados, pitted with flesh scooped out

1/4 cup plus 2 tablespoons cocoa powder

1 (15 oz) can unsalted organic black beans, rinsed & drained

3/4 cup unsweetened plant-based milk

1/4 cup organic raw honey or maple syrup

1 teaspoon organic pure vanilla extract

2 tablespoons organic ground chia seeds

1/2 teaspoon fine sea salt

Instructions:

Pit and chop the dates.  Place in a small bowl and cover with hot water for 5 minutes to soften for easier blending.
Drain the dates and transfer to a blender or food processor.  Add the pumpkin seeds, avocados, cocoa powder, black beans, milk, sweetener, vanilla, chia seeds, and salt.  Process until smooth, pausing to scrape the sides of the blender or bowl as needed.  If the mixture is too thick, add additional milk, 1 tablespoon at a time, until the desired consistency is reached. Serve immediately with optional toppings (chopped nuts or seeds, fruit, flaked coconut, mini chocolate chips) or transfer to airtight container and chill in the refrigerator.
